Tropical Fruit Bread - cooking recipe

Ingredients
    2 large ripe bananas (about 1 c. mashed)
    8 oz. can pineapple chunks
    1 1/2 c. flour
    3/4 c. sugar
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    2 eggs
    1/4 lb. butter (room temperature)
    1/2 c. plus 1 Tbsp. flaked coconut
Preparation
    Heat oven to 350\u00b0.
    Butter a loaf pan.
    Mash bananas.
    Drain pineapple, chop and pat dry.
    With electric mixer on low speed, beat flour, sugar, baking powder, soda, salt, eggs, bananas and butter until blended.
    Increase speed to medium and beat 2 minutes.
    Stir in pineapple and 1/2 cup coconut.
    Pour into prepared pan and sprinkle with remaining 1 tablespoon coconut. Bake 1 hour (or until toothpick inserted in center comes out clean).
    Cool for 10 minutes.
    Remove from pan and cool completely.
