Diabetic Pumpkin Walnut Bread - cooking recipe
Ingredients

1/2 c. vegetable oil
6 tsp. Sweet 'N Low
2 eggs
1 c. pumpkin
1/3 c. water
2 c. flour
1 c. quick oats
1 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. baking powder
1/2 c. chopped walnuts or pecans
Preparation

In large bowl, mix oil, Sweet 'N Low, eggs, pumpkin and water. Stir in remaining ingredients.
Pour into mini loaf pans.
Bake at 350\u00b0 for about 35 minutes.
Remove from pans and cool.
May use regular loaf pan, but will need to bake longer.
