Zucchini Pie - cooking recipe

Ingredients
    4 c. thinly sliced zucchini
    1/4 c. chopped onion
    1 clove garlic, minced
    3 Tbsp. margarine
    1/2 c. snipped fresh parsley or 2 Tbsp. dried parsley
    1/4 tsp. salt
    1/4 tsp. oregano
    1/2 tsp. basil
    dash of pepper
    2 eggs
    2 c. grated Mozzarella cheese, divided
Preparation
    Saute squash, onion and garlic in margarine for approximately 10 minutes; add spices and mix well.
    In a large bowl, beat eggs. Add 1 1/2 cups of cheese, then add squash mixture.
    Pour into a 9-inch pie plate that has been lightly sprayed with cooking spray and bake 20 to 25 minutes at 375\u00b0.
    About 10 minutes before it is done, sprinkle remaining 1/2 cup cheese over the top of the pie. Let it sit for about 5 minutes before cutting.
