Sheepherder'S Bread - cooking recipe

Ingredients
    3 c. very hot water
    1/2 c. butter
    1/3 c. sugar
    2 1/2 tsp. salt
    2 pkg. yeast
    9 to 9 1/2 c. flour
    salad oil
Preparation
    Combine water, butter, sugar and salt.
    Stir until butter melts.
    Cool to 110\u00b0.
    Stir in yeast.
    Set until bubbly (15 minutes) in warm place.
    Beat in 5 cups of the flour to make a thick batter.
    Stir in 3 1/2 cups flour to make stiff dough. Knead until smooth and satiny, 10 to 20 minutes.
    Put in greased bowl until doubled (1 to 1 1/2 hours).
    Punch down and knead to form a smooth ball.
    Cover inside of Dutch oven with foil.
    Grease it and the lid.
    Place dough in pot and cover.
    Let rise 1 hour until lid rises 1/2 inch.
    Bake, covered, in a 375\u00b0 oven for 12 minutes.
    Remove lid and bake 30 to 35 minutes.
    Sounds hollow.
