Zucchini Relish - cooking recipe
Ingredients

1 green bell pepper, chopped
1 red bell pepper, chopped
1 small head cauliflower, chopped and cooked tender
6 to 8 carrots, chopped and cooked tender
2 qt. cooked green beans, chopped
2 1/4 c. vinegar
4 c. sugar
2 Tbsp. dry mustard
1 Tbsp. turmeric
1 tsp. celery seed
2 Tbsp. flour
1 Tbsp. nutmeg
10 c. ground squash
4 c. chopped onions
5 Tbsp. salt
Preparation

Soak ground squash and onions in salt overnight; next morning drain in sieve.
Wash by running water over mixture while still in sieve.
Drain very well.
Place in large cooker.
Mix all ingredients well and simmer 35 minutes.
Seal in jars.
Process for 30 minutes in a boiling water bath for pints.
