Zucchini Bread(From Ina) - cooking recipe

Ingredients
    3 eggs
    1 c. salad oil
    2 c. dark brown sugar, packed
    2 c. grated raw, unpeeled zucchini
    3 c. all-purpose flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. baking powder
    2 tsp. cinnamon
    1 tsp. pure vanilla
    1 c. chopped nuts
Preparation
    Preheat oven to 350\u00b0.
    Grease two 9 x 5 x 3-inch loaf pans. Beat eggs.
    Add oil, brown sugar and zucchini and mix well.
    Stir in flour, salt, soda, baking powder and cinnamon.
    Fold in vanilla and nuts.
    Bake at 350\u00b0 for 1 hour.
    Remove from pans; cool on rack.
    Makes 2 loaves.
