Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    1 1/4 c. sugar
    2 tsp. soda
    1 tsp. cinnamon
    1 1/2 c. carrots, shredded
    1 1/2 c. apple, shredded
    3/4 c. coconut
    1/2 c. snipped dates
    1/2 c. pecans or walnuts
    3 eggs, beaten
    1 c. oil
    1/2 tsp. vanilla
Preparation
    In separate bowl, mix together flour, sugar, soda and cinnamon.
    In another bowl, mix carrots, apple, coconut, dates and nuts.
    Mix eggs, oil and vanilla; add fruit to this mixture.
    Stir well.
    Add the dry ingredients to this; stir just until all is moistened.
    Fill muffin cups.
    Bake at 375\u00b0 for 18 to 20 minutes.
