Ingredients

1 c. sugar
1 tsp. lemon rind (optional)
1/2 tsp. salt
1 tsp. vanilla
3/4 c. butter or margarine
3 c. flour
1 egg
1 tsp. baking soda
1 egg white, slightly beaten
Preparation

Cream sugar, salt and butter.
Beat egg, lemon and vanilla into creamed mixture until light and fluffy.
Sift together flour and baking soda and gradually stir into creamed mixture.
Roll dough 1/8-inch thick on floured surface.
Cut and bake on ungreased cookie sheet.
Brush with egg white; sprinkle on sugar. Bake at 350\u00b0 for 11 to 12 minutes or until light brown.
(If dough seems a little dry, add milk until you reach the right consistency.)
