Zucchini Bread - cooking recipe

Ingredients
    3 eggs, well beaten
    2 c. sugar
    3 c. grated zucchini
    1 c. oil
    2 tsp. vanilla
    3 c. flour
    1 tsp. each: salt, cinnamon, baking soda and baking powder
    1 c. chopped nuts
    3/4 c. coconut, if desired
Preparation
    Mix together eggs and sugar; add zucchini, oil and vanilla. Mix all other ingredients together.
    Add both mixtures together; mix well.
    Pour into 2 greased and floured loaf pans.
    Bake at 325\u00b0 to 350\u00b0 for 60 minutes.
