Zucchini Relish - cooking recipe
Ingredients

10 c. peeled, chopped zucchini
4 c. chopped onions
5 Tbsp. salt
2 1/4 c. cider vinegar
6 c. sugar
1 Tbsp. nutmeg
1 Tbsp. turmeric
2 Tbsp. cornstarch
2 Tbsp. celery seed
1/2 tsp. pepper
Preparation

Grind zucchini and onions; add salt.
Let stand overnight. Drain and rinse in cold water.
Drain thoroughly.
Add remaining ingredients; cook for 30 minutes, stirring frequently.
Seal in sterilized jars.
