Zucchini Bread - cooking recipe

Ingredients
    1 c. oil
    3 eggs
    2 c. zucchini, grated (use peeling)
    2 c. sugar
    1 tsp. vanilla
    3 c. flour, sifted
    1 tsp. salt
    1/4 tsp. baking powder
    1 tsp. soda
    1 tsp. cinnamon
    1 c. drained crushed pineapple (optional)
Preparation
    Grate zucchini, using peeling.
    Beat together eggs, oil, zucchini, vanilla and sugar.
    Beat thoroughly.
    Mix together in another bowl the flour, salt, baking powder, cinnamon and soda. Add dry ingredients to zucchini mixture.
    (Optional:
    Add nuts, raisins or dates.) Makes 2 large loaves or 3 small loaves.
    Grease and flour loaf pans.
    Bake at 325\u00b0 for 1 hour.
    Take out of pans immediately.
    Cool on racks.
