Ingredients

2 c. shortening
2 c. sugar
2 c. brown sugar
4 large eggs
2 tsp. vanilla
3 c. self-rising flour
4 c. quick cooking oatmeal
2 c. coconut
chopped pecans (optional)
Preparation

In a large bowl, use an electric mixer to cream shortening and both sugars.
Add eggs and vanilla; beat well.
Add flour until there are no traces of white seen.
Work in oats, pecans and coconut.
Drop by heaping tablespoonfuls, 3 inches apart, onto ungreased cookie sheets.
Bake at 350\u00b0 until edges begin to turn brown, about 10 to 12 minutes.
Centers will be soft.
Remove from pan to cool.
Makes about 5 dozen 3-inch cookies.
