Banana Tea Bread - cooking recipe

1 3/4 c. sifted all-purpose flour
2 tsp. double-acting baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 c. soft shortening
2/3 c. granulated sugar
2 eggs, separated
1 c. mashed ripe bananas (2 or 3)
Preparation

Start heating oven to 350\u00b0 and grease 9 x 5 x 3-inch loaf pan. Beat egg whites until stiff.
Sift flour, baking powder, soda and salt.
With electric mixer at medium speed or with spoon, thoroughly mix shortening with sugar, then with egg yolks until very light and fluffy, about 4 minutes altogether.
Then, at low speed, beat in flour mixture alternately with bananas just until smooth.
Fold in egg whites.
Turn mixture into pan.
Bake 1 hour or until cake tester inserted in center comes out clean.
Cool in pan 10 minutes; remove.
Cool overnight before slicing.
