Ingredients

1/2 c. margarine
1/2 c. shortening
3/4 c. sugar
1 c. shredded carrots
2 eggs
2 c. flour
2 tsp. baking powder
2 tsp. salt
3/4 c. shredded coconut
Preparation

Mix together first 5 ingredients. Stir in remainder of ingredients. Drop on lightly greased cookie sheet 2-inches apart. Bake until when touched lightly almost no imprint of finger remains. Brown as little as possible. Bake 10 minutes at 400\u00b0. Cool. Frost lightly with vanilla frosting.
