Sugar-Free Carrot Cake(Diabetic) - cooking recipe

Ingredients
    1/2 c. Sugar Twin
    4 eggs or egg substitute
    1/2 c. oil or unsweetened applesauce
    1 tsp. lite salt
    3/4 c. chopped pecans
    2 c. grated carrots
    1 (5 oz.) can crushed pineapple (unsweetened), undrained
    1 1/2 tsp. baking soda
    1 Tbsp. cinnamon
    1/2 tsp. nutmeg
    1 1/2 c. plain flour
    1 small box instant sugar-free vanilla pudding
    2 tsp. baking powder
Preparation
    Preheat oven to 350\u00b0.
    Spray and flour 9 x 13-inch pan.
    Beat eggs; add Sugar Twin, water and oil.
    Sift dry ingredients together and slowly add to egg mixture.
    Add carrots, pecans and pineapple.
    Spread in prepared pan and bake for 40 minutes.
    Cool and frost.
