Zucchini Bread - cooking recipe
Ingredients

3 eggs, lightly beaten
1 c. vegetable oil
2 c. sugar
2 c. grated zucchini (unpeeled)
3 tsp. vanilla
3 c. flour
1 tsp. salt
3 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. raisins
1 c. chopped nuts
Preparation

In a large bowl, beat eggs and add oil, sugar, zucchini and vanilla, mixing well.
In another bowl, mix flour, salt, cinnamon, baking soda and baking powder.
Add dry ingredients to the sugar mixture.
Mix well, until moist.
Add nuts and raisins.
Pour into two greased and floured loaf pans and bake at 350\u00b0 for 1 hour. Cool before cutting.
