Ingredients

1 Cup sugar
3/4 Cup shortening (part margarine, softened)
2 eggs
1 tsp. vanilla
2 1/2 Cups flour
1 tsp. baking powder
1 Tbsp. salt
Preparation

Mix sugar, shortening, eggs and vanilla.
Stir in remaining ingredients.
Cover and refrigerate 1 hour.
Lightly grease cookie sheet.
Cut dough into 48 rounds.
Cut out the centers of 24 of the rounds.
Place uncut rounds on cookie sheet.
top with filling, spreading almost to edges.
Top with remaining rounds. Press edges together with fingers or fork.
Sprinkle tops with sugar.
Bake until very light brown at 400 for 6 to 8 minutes.
