Pineapple Zucchini Cake - cooking recipe
Ingredients

3 eggs
2 c. sugar
1 c. oil
2 c. grated zucchini, well drained
3 c. flour
1 tsp. baking powder
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt or less
1 (8 oz.) crushed pineapple (undrained)
1 c. chopped walnuts
1 c. raisins
3/4 c. maraschino cherries, cut in halves
Preparation

Beat eggs until fluffy.
Add sugar, oil and vanilla and blend well.
Add zucchini.
Sift together flour, baking powder, baking soda and salt and add to batter.
Stir in pineapple, undrained. Add nuts and cherries.
Bake at 350\u00b0 for 1 hour.
