Zucchini Bread - cooking recipe

Ingredients
    4 eggs
    2 c. sugar
    1 c. oil
    1 tsp. vanilla
    1/2 c. chopped walnuts
    3 1/2 c. flour
    1 1/2 tsp. salt
    1 tsp. cinnamon
    2 c. coarsely grated zucchini, raw and unpeeled
Preparation
    Beat eggs until frothy.
    Beat in sugar until thick and lemon colored, then beat in oil and vanilla; add nuts.
    Combine flour, salt, cinnamon and baking powder in separate bowl.
    Stir in dry ingredients alternately with grated zucchini. Pour into two large greased and floured loaf pans.
    Bake for 1 hour at 350\u00b0 or until done.
    Freezes well.
