Ingredients

2 eggs
2/3 c. Wesson oil
2 tsp. vanilla
1/4 tsp. lemon extract or 1 tsp. lemon rind
1/2 tsp. salt
3/4 c. sugar
2 c. all-purpose flour
2 tsp. baking powder
Preparation

Beat eggs with fork until well mixed.
Stir in oil, vanilla and lemon; blend in sugar.
Add flour, baking powder and salt which had been sifted together.
Drop by teaspoonful 2 inches apart on ungreased cookie sheet, lightly grease bottom of a glass (with oil) and dip in sugar and flatten cookie.
Keep dipping glass in sugar.
Bake at 400\u00b0 for 8 to 10 minutes.
Makes about 3 dozen 3-inch cookies.
