Pauline'S Lo-Calorie Potato Salad - cooking recipe
Ingredients

5 potatoes (medium size)
2 boiled eggs (whites only)
1/4 c. sweet pickles, chopped
1/2 medium onion, finely chopped
lite salt to taste
pepper to taste
1/2 c. low-fat yogurt
1/4 c. low-fat mayonnaise
1 Tbsp. mustard
parsley, chopped
Preparation

Peel and cook potatoes until done, about 45 minutes.
Drain and let cool for an hour or so, then put in the refrigerator.
After the potatoes have cooled, add the chopped egg whites, pickles, onion, salt and pepper.
Just before you get ready to serve, make the dressing by combining the yogurt, mayonnaise and mustard.
Stir into the potatoes.
Sprinkle with parsley before serving.
