Gourmet Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. vegetable oil
    1 Tbsp. vanilla
    2 c. grated zucchini
    2 c. flour
    1 Tbsp. cinnamon
    2 tsp. baking soda
    1 tsp. salt
    1 1/4 tsp. baking powder
    1 c. chopped walnuts
Preparation
    In a bowl, beat 3 eggs until frothy.
    Beat in 2 cups sugar, 1 cup vegetable oil and 1 tablespoon vanilla.
    Beat mixture until thick and lemon colored.
    Stir in 2 cups loosely packed, coarsely grated zucchini and 2 cups flour sifted with cinnamon, baking soda, salt and baking powder.
    Fold in 1 cup chopped nuts.
    Pour into 2 oiled and floured loaf pans (8 x 4 1/2 x 3-inch).
    Bake at 350\u00b0 for 1 hour.
    Let loaves cool in pans for 10 minutes; then invert loaves on racks and allow to cool for 1 hour.
