Carrot Cookies - cooking recipe

Ingredients
    3/4 c. melted shortening
    1 1/4 c. brown sugar
    2 eggs
    1 tsp. vanilla
    1 Tbsp. grated lemon rind
    1/2 c. buttermilk
    1 tsp. baking powder
    2 c. sifted flour
    1/2 tsp. baking soda
    1 tsp. salt
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    2 c. rolled oats
    3/4 c. chocolate chips
    1/2 c. walnuts
    2 c. grated carrots
Preparation
    In mixer bowl, combine shortening, sugar, eggs, vanilla, lemon rind and buttermilk.
    Sift flour, baking soda, baking powder, salt and spices.
    Add to liquid ingredients, along with rolled oats, nuts and chocolate chips.
    Stir just until moistened.
    Drop by tablespoons onto greased cookie sheet.
    Flatten.
    Bake at 400\u00b0 for 18 to 20 minutes.
