Coconut Bread - cooking recipe
Ingredients

3 c. all-purpose flour
1 Tbsp. baking powder
1 tsp. salt
1 c. sugar
2 c. finely grated fresh coconut
1 egg, well beaten
1 tsp. vanilla
1 c. evaporated milk
4 oz. unsalted butter, melted and cooled
sugar (for sprinkling)
Preparation

Sift the flour, baking powder and salt together.
Mix in the sugar and coconut.
Add the egg, milk, vanilla and butter.
Mix lightly but thoroughly.
Divide the mixture between 2 greased 9 x 5-inch loaf pans.
Fill each about 2/3 full.
Sprinkle with sugar and bake in a 350\u00b0 oven for about 55 minutes or until a cake tester comes out clean.
Let loaves cool partially in pans.
Then turn out on cake rack.
