Ingredients

3/4 c. sugar
3/4 c. shortening
1 egg
1 1/4 c. grated, raw carrots
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. lemon extract
Preparation

Cream together the sugar and shortening until light and fluffy.
Add egg and beat well.
Stir in carrots.
Sift together the dry ingredients; combine with creamed mixture.
Add vanilla and lemon extract.
Drop by teaspoonful on greased cookie sheet. Bake in a 375\u00b0 oven for 15 minutes or until golden.
Makes 4 dozen.
