Zucchini Bread - cooking recipe

Ingredients
    3 eggs, well beaten
    2 c. sugar or equivalent amount of artificial sweetener
    3 c. flour
    3 tsp. vanilla
    1 c. oil or apple sauce
    2 c. shredded zucchini (do not drain water if frozen)
    1/2 tsp. baking powder
    1 tsp. salt
    1 tsp. soda
    3 tsp. cinnamon
    1/2 c. chopped nuts (optional)
Preparation
    Mix all ingredients together well.
    Grease 1 large or 2 small loaf pans.
    Pour batter and bake in 325 degree oven for 50 to 55 minutes (less time if using small pans).
