Zucchini Rounds - cooking recipe

Ingredients
    1/3 c. biscuit mix
    1/8 tsp. pepper
    2 c. shredded zucchini
    2 Tbsp. oleo
    1/4 c. Parmesan cheese
    2 slightly beaten eggs
Preparation
    Stir together biscuit mix, cheese and pepper.
    Stir in beaten eggs until mixture is moistened.
    Fold in zucchini.
    Use about 2 tablespoons oleo for each round.
    Make into patties and fry 2 or 3 minutes on each side.
    Drain.
