Carrot Cookies - cooking recipe

Ingredients
    1 egg
    1 c. shortening
    2 c. flour (make 1 or 1/2 whole wheat flour if you like more nutrition)
    4 Tbsp. dark brown sugar
    1/2 tsp. salt
    1 tsp. vanilla
    1 c. grated raw carrots
    1 c. chopped nuts or 1/2 c. chopped nuts and 1/2 c. raisins
Preparation
    Cream shortening and egg together.
    Combine flour, sugar and salt and add to creamed mixture.
    Stir in remaining ingredients and mix well.
    Form dough into 2 (1-inch) rolls.
    Wrap in plastic and chill at least 2 to 3 hours.
    Slice into 1/2-inch slices. Bake on ungreased cookie sheets at 375\u00b0
    for 10 minutes.
    Cool on wire rack.
    Makes 6 dozen nutritious delicious cookies.
    Great for school lunch boxes.
