Carrot Lemon Bread - cooking recipe

Ingredients
    1/2 medium size lemon
    3 extra large eggs
    1 c. vegetable oil
    1 3/4 c. granulated sugar
    2 c. shredded carrots
    3 c. all-purpose flour
    1 tsp. salt
    1/2 tsp. baking powder
    1 tsp. baking soda
Preparation
    Grind lemon (peel and pulp) with meat chopper or blender. Beat eggs in mixing bowl.
    Add oil and sugar. Mix well.
    Add carrots and lemon and blend.
    Sift together dry ingredients.
    Add to liquid ingredients and lightly blend.
    P our into 2 greased loaf pans and bake at 350\u00b0 for 45 to 50 minutes or until a cake tester inserted into the center comes out clean.
