Zucchini Relish - cooking recipe
Ingredients

12 c. sliced zucchini
4 c. sliced onions
1 red pepper
1 green pepper
5 Tbsp. salt
2 1/2 c. cider vinegar
6 c. sugar
3/4 tsp. nutmeg
3/4 tsp. turmeric
1 1/2 tsp. celery seed
1/2 tsp. black pepper
1 Tbsp. dry mustard
3/4 Tbsp. cornstarch
5 Tbsp. noniodized salt
Preparation

Grind vegetables; mix with salt.
Cover with plastic and let stand in nonmetal bowl overnight.
Use 2 bowls if necessary.
Next day, rinse and drain well.
