Impossible Zucchini Quiche - cooking recipe
Ingredients

2 c. chopped zucchini
1 c. tomatoes
1/2 c. onion, chopped
1/3 c. Parmesan cheese
a sprinkle of oregano, basil and parsley (optional)
pepper to taste
1 1/2 c. milk
3/4 c. Bisquick mix
3 eggs
1/4 tsp. salt
Preparation

Heat oven to 400\u00b0.
Lightly grease a 10-inch pie plate.
Mix the veggies, cheese and spices together and put in the plate.
In blender, mix the milk, Bisquick mix and eggs and blend until well mixed.
Pour over the veggies and stir gently.
Bake for 30 minutes or until a silver knife comes out pretty clean when inserted 1-inch from the edge.
Cool slightly and serve.
Good with a tossed salad and a crispy homemade bread.
