Carol'S Zucchini Relish - cooking recipe
Ingredients

12 c. grated zucchini
2 c. each: red and green bell peppers, chopped finely
4 c. onions, chopped finely
1/3 c. pickling salt
1 tsp. curry powder
1 Tbsp. cornstarch
1 tsp. turmeric powder
1 tsp. celery seed
1/2 tsp. pepper
4 1/2 c. sugar
3 c. white vinegar
2 lb. green beans or enough to pack in 4 (1 pt.) jars, washed and trimmed to same length
1 tsp. cayenne pepper
4 cloves garlic
4 heads fresh dill
2 1/2 c. water
2 1/2 c. vinegar (white)
1/4 c. pickling salt
1/4 tsp. cayenne pepper
1 clove garlic
1 head dill
Preparation

Combine in kettle: water, vinegar and salt.
Heat to boiling. Pour over beans and seal.
Process in boiling water bath for 10 minutes.
Will be ready for eating in 2 weeks.
