Zucchini Bread - cooking recipe
Ingredients

3 eggs, beaten
1 c. salad oil
1 c. sugar
2 c. zucchini, grated
2 tsp. vanilla
3 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
3/4 c. raisins
1 c. nuts, chopped
Preparation

Mix first 6 ingredients.
Sift together dry ingredients; combine with zucchini mixture.
Add raisins and nuts.
Makes 2 loaves.
Bake at 350\u00b0 for 1 hour.
Cool 10 minutes.
(You may substitute 1/2 cup coarse bran for 1/2 cup of flour).
