Chicken Cacciatore - cooking recipe

Ingredients
    2 chicken breasts
    3 Tbsp. cooking oil
    3 medium onions, sliced
    2 garlic cloves, minced
    1 (16 oz.) can tomatoes
    1 tsp. salt
    1/4 tsp. pepper
    6 to 8 mushrooms
    1 tsp. sweet basil
    2 bay leaves
    1 to 2 sliced peppers
Preparation
    In frypan, cook onions, garlic and pepper until tender, not brown.
    Skin chicken and add to pan.
    Add the rest of ingredients; cover and simmer 20 minutes.
    Take out chicken and remove meat; return meat to pan and cover.
    Cook 25 minutes still on simmer. Serve over rice or linguine.
