Shortbread Cookies - cooking recipe

Ingredients
    2 c. all-purpose flour
    4 2/3 c. powdered sugar, sifted
    1 1/3 c. cornstarch
    2 1/3 c. butter
    1/2 tsp. vanilla
    2 1/2 tsp. grated lemon peel
    1/2 c. lemon juice
Preparation
    Preheat oven to 350\u00b0. In a mixing bowl, combine flour, cornstarch and 2/3 cup of powdered sugar. In another bowl, beat 2 cups butter on medium until light and fluffy. Add flour mixture, 1/2 teaspoon of lemon peel and vanilla. Beat until well blended. Refrigerate for 1 hour, until easy to handle. Shape into 1-inch balls and place on an ungreased cookie sheet about 1 1/2 to 2-inches apart. Bake 10 to 12 minutes, until lightly browned. Cool completely.
