Zucchini Tomato Bake - cooking recipe
Ingredients

2 cloves garlic, crushed
1 onion, chopped
3 Tbsp. oil
1/2 tsp. basil
2 Tbsp. parsley
2 c. sliced zucchini
2 c. peeled, sliced fresh tomatoes or 1 can tomatoes, drained
2 c. sliced yellow squash
1 tsp. salt
1/4 tsp. pepper
2 packets instant chicken broth
3/4 c. grated Parmesan cheese
Preparation

Saute first 3 ingredients until tender.
Add remaining ingredients (except cheese) and simmer approximately 10 minutes or until zucchini is crisp and tender.
Transfer to baking dish. Remove most of the broth; it should be wet, not soupy.
Top with cheese and bake at 375\u00b0 for 30 minutes.
