Zucchini Cake - cooking recipe

Ingredients
    3 eggs, beaten
    1 c. vegetable oil
    2 c. sugar
    2 tsp. vanilla
    2 c. self-rising flour
    3 tsp. cinnamon
    2 c. zucchini, unpeeled and coarsely grated
    1 c. nuts (optional)
Preparation
    Combine eggs, oil, sugar and vanilla.
    Mix well.
    Combine dry ingredients and add to oil mixture, mixing well.
    Stir in grated zucchini.
    Add nuts.
    Pour into a greased and floured Bundt pan. Bake at 350\u00b0 for 55 to 60 minutes.
    Allow to cool for 20 minutes before removing from pan.
