Zucchini Relish - cooking recipe

Ingredients
    10 c. coarsely ground zucchini (seeds out; unpeeled)
    4 c. ground onions
    1 red and 1 green bell pepper, ground
    5 Tbsp. pickle salt
    2 1/2 c. cider vinegar
    4 c. white sugar
    1 tsp. each: dry mustard, nutmeg, turmeric and cornstarch
    1/2 tsp. pepper
Preparation
    Combine ground zucchini and ground onions; add ground bell peppers.
    Sprinkle with pickle salt.
    Cover mixture and let set overnight.
    Drain and rinse.
    Squeeze as dry as possible.
    In a large pot, add to ground mixture the vinegar, white sugar, dry mustard, nutmeg, turmeric, cornstarch and pepper.
    Cook for 30 minutes; stir occasionally.
    Be careful not to scorch.
    Seal in hot jars.
    Makes 7 pints.
