Zucchini Boats - cooking recipe

Ingredients
    6 zucchini (2 c. diced pulp)
    1/2 lb. ground sausage
    1/2 lb. ground beef
    1/3 c. chopped onion
    1/2 tsp. minced garlic
    1 egg, slightly beaten
    3/4 c. soft bread crumbs
    1/3 c. grated Parmesan cheese
    1/2 tsp. salt
    1/8 tsp. pepper
    1 tsp. oil
    3 Tbsp. chopped parsley
    1 Tbsp. pimento
Preparation
    Trim off ends of zucchini and cut in half lengthwise.
    Scoop out centers.
    Place shells in shallow pan.\tDice pulp; set aside. Brown meat, garlic and onion.
    Stir in pulp, parsley, salt, pepper, Parmesan cheese, bread crumbs and egg.
    Spoon into shells and top with additional Parmesan cheese.
    Bake in 350\u00b0 oven for 30 minutes or until brown.
    An easy way to use up zucchini.
