Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. grated zucchini
    3 tsp. vanilla
    1 c. cooking oil
    2 c. sugar
    1 c. chopped nuts
    3 c. flour
    1 tsp. salt
    1 tsp. soda
    1/2 tsp. baking powder
    3 tsp. cinnamon
Preparation
    Beat eggs until light and foamy.
    Add oil, sugar, zucchini and vanilla.
    Mix lightly, then add nuts and dry ingredients just until blended.
    Bake at 325\u00b0 for 1 hour in greased, floured pans. Remove from pans to prevent sticking.
    Cool on racks.
    Makes 2 loaves.
    Freezes well.
