Fresh Ginger Cookies - cooking recipe

Ingredients
    2 1/4 c. flour
    1 tsp. baking soda
    1/2 tsp. salt
    2 Tbsp. grated fresh ginger
    12 Tbsp. room temperature butter
    1 c. sugar plus more for rolling
    1/4 c. molasses
    1 egg
Preparation
    Combine flour, soda and salt.
    Beat ginger, butter and 1 cup sugar until light and fluffy.
    Beat in molasses and egg.
    Beat in flour mixture until just combined.
    Chill at least 1 hour. Heat oven to 350\u00b0.
    Roll dough into 1 1/2-inch balls and then roll in sugar.
    Place 2 inches apart on ungreased baking sheets. Bake until edges start to brown, about 15 minutes.
    Centers will be slightly soft.
    Let stand on cookie sheets 1 minute and remove to racks to cool completely.
    Makes about 30 cookies.
