Zucchini Bread - cooking recipe

Ingredients
    3/4 c. oil
    2 c. sugar
    3 eggs
    2 c. peeled, grated zucchini
    2 tsp. vanilla
    3 c. flour
    1 tsp. baking soda
    1 tsp. salt
    3 tsp. cinnamon
    1/2 c. nuts (optional)
    1 c. chopped dates
Preparation
    Cream oil and sugar; add eggs, peeled, grated zucchini and vanilla.
    Sift together flour, baking soda, salt and cinnamon. Gradually mix into zucchini mixture.
    Add 1/2 cup nuts and chopped dates.
    Pour into 2 lightly greased and floured loaf pans.
    Bake 45 to 60 minutes in a 350\u00b0 oven (makes 3 small or 2 large loaves).
