Zucchini Bread - cooking recipe

Ingredients
    3 eggs, well beaten
    2 c. sugar
    3 c. flour
    1 tsp. salt
    1 to 3 tsp. cinnamon
    1 c. coconut (optional)
    1/4 tsp. baking powder
    1 c. oil
    2 to 3 c. grated zucchini
    2 to 3 tsp. vanilla
    1 tsp. soda
    1 c. nuts (optional)
    dash of cloves and nutmeg
Preparation
    Beat eggs until light and foamy.
    Add sugar, oil, zucchini and vanilla.
    Add dry ingredients.
    Beat until incorporated.
    Bake in 3 greased small loaf pans or 2 large.
    Bake at 325\u00b0 for 1 hour or until light brown.
    Remove from pans at once.
    Cool on rack.
