Zucchini Relish - cooking recipe
Ingredients

10 c. ground zucchini, not peeled
4 c. ground onions
5 Tbsp. pickling salt
2 1/4 c. vinegar
4 1/2 c. sugar
1 Tbsp. nutmeg
1 Tbsp. dry mustard
1 Tbsp. turmeric
1 Tbsp. cornstarch
2 tsp. celery salt
1/4 tsp. pepper
1 green and 1 red pepper, chopped fine
Preparation

Put zucchini, onion
and
pickling
salt in large bowl. Mix well and
refrigerate
overnight.
Drain and rinse in cold water. Drain again
and
place in large kettle with remaining ingredients.
Bring to a boil and simmer 30 minutes uncovered, stirring occasionally.
Pour
into\thot
pint
jars
and seal. Makes 6 to 8 pints.
