Burnt Sugar Candy - cooking recipe

Ingredients
    3 c. sugar, divided
    1 c. milk
    1/2 c. butter
    1/2 c. chopped pecans
Preparation
    Combine 2 cups sugar, milk and butter in a heavy 3-quart saucepan; stir well.
    Cook over medium heat, stirring often, until butter melts.
    Place remaining 1 cup sugar in a heavy skillet. Cook over medium heat, stirring constantly, until sugar melts and syrup is light golden brown.
    Gradually stir this into butter mixture.
    Cook until mixture reaches soft ball stage.
    Remove from heat; let mixture cool.
    Beat at high speed with electric mixer until mixture will hold its shape.
    Shape candy into two 7 x 1 1/2-inch logs.
    Roll in pecans.
    Wrap in plastic wrap; chill 1 to 2 hours.
    Cut into slices.
    Makes 2 pounds.
