Special Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    3 c. grated zucchini
    2 c. sugar
    3 c. flour
    1 tsp. salt
    1 tsp. cinnamon
    2 tsp. baking soda
    1 tsp. baking powder
    2 tsp. vanilla
    1 1/2 c. nuts and coconut, mixed (optional)
Preparation
    Remove seeds from raw zucchini and grate.
    Mix eggs, oil, zucchini, sugar, flour, salt, cinnamon, baking soda and baking powder together.
    Stir well.
    Fold in vanilla and coconut/nut mixture.
    Put into 2 loaf pans, greased, and bake at 350\u00b0 until lightly browned, approximately 45 minutes to 1 hour.
    Cool in pan tipped on side.
    After 15 to 20 minutes, pop out of pans and continue cooling.
