Skillet Zucchini Combo - cooking recipe
Ingredients

3 medium ears of corn
1 medium onion, quartered and sliced
1 red bell pepper, cut into 1/2-inch squares
1 clove garlic, minced
2 Tbsp. oil
3 medium zucchini, sliced
1 large tomato, peeled and chopped
2 jalapeno peppers, seeded and minced
1 1/2 tsp. fresh or 1/2 tsp. basil
1/2 tsp. dried Italian seasoning
1/2 tsp. salt
1/4 c. fresh Parmesan cheese
Preparation

Cut corn from cobs and set aside. Saute onion, bell pepper and garlic in oil in a large skillet 5 minutes. Add zucchini; cook, stirring often, 7 minutes. Add corn, tomato and next 4 ingredients; cover and cook over low heat, stirring often, 7 minutes. Sprinkle with Parmesan cheese and serve immediately.
