Ingredients

2 c. brown sugar
3/4 c. shortening
2 eggs, beaten
1 tsp. vanilla
1 tsp. baking soda
3 c. flour
1 tsp. cream of tartar
1/4 tsp. salt
2 c. coconut
Preparation

Cream the sugar and shortening together.
Add the beaten eggs and vanilla and mix.
Add the baking soda, dissolved in 1 Tbsp. hot water.
Then add the flour sifted with the cream of tartar and salt.
Add the coconut and mix to a dough.
Shape into 2 long rolls and chill until firm.
Then slice and bake in a moderate oven for about 12 minutes.
