Banana Jam Bread - cooking recipe
Ingredients

1/2 c. shortening
2 eggs
1 tsp. lemon juice
1 Tbsp. baking powder
1/2 tsp. salt
1 c. sugar
1 c. mashed bananas
2 c. all-purpose flour
1/2 c. strawberry jam
1 c. pecans, chopped
Preparation

Cream the shortening. Add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine bananas and lemon juice. Stir into creamed mixture. Combine flour, baking powder and salt.
Stir into creamed mixture. Stir in jam and pecans. Spoon batter into 2 greased and floured loaf pans. Bake for 50 minutes. Cool in pans 10 minutes before removing.
