1 tsp. baking soda
1 c. plus 1 Tbsp. granulated sugar, divided
1 c. packed brown sugar
1 c. (2 sticks) margarine or butter, softened
2 tsp. vanilla
2 eggs
1 c. chopped pecans, divided
1 (9 oz.) pkg. caramels in milk chocolate (unwrapped; such as Rolo chewy caramels)
4 oz. vanilla-flavored candy coating (optional)
